Beet Salad

A colorful and tasty salad
Ingredients:
-4 roasted and peeled beets, sliced
-2 cups of mixed greens
-2 Tbsp crumbled goats cheese
-¼ cup homemade candied pecans (pecans toasted in maple syrup)
Dressing:
-Olive oil
-Apple cider vinegar (to taste)
Instructions:
1. Combine all ingredients and lightly toss with salad dressing
